Fresh Berry Protein Fruit Pancakes

Ingredients

100g banana

1 large egg

50g Fage 0% Greek yoghurt

8g coconut flour - https://amzn.to/4h6WmPP

15g whey protein powder (any flavour – I use Vanilla)

1 tsp baking powder

30g raspberries

30g blueberries

50g ricotta cheese

2g grated coconut (I buy the boxes of fresh chunks from supermarkets)

One cal spray

Method

1. Mash the banana. Add the egg, 25g Greek yoghurt, coconut flour, whey protein and baking powder. Blend with the fork until well mixed.

2. Heat up a non-stick pan or pancake pan on a medium heat (I use one with four pre-defined pancake compartments to help keep the pancakes in shape). Spray with one cal spray (I use the butter one). Divide the mix into four and pour into four equal circles. Flip over with a palette knife when cooked on the underside and repeat. Be careful not to over-cook. They should rise a little and look soft and fluffy.

3. Mix 25g Greek yoghurt with the 50g ricotta cheese. Sandwich between the pancakes or have on the side. Garnish with the raspberries and blueberries and grate the coconut over the top
