How to have your cake and eat it…


I don’t know about you, but the major reason I struggled with weight loss for many years was the feeling that I was going to be deprived on any diet – it just made me feel resentful and of course that led to revenge eating. The great learning from my own nutritional journey was that eating healthily and being aware of what you are eating can be fun, tasty and filling. In particular, as a fanatical baker I was determined to include recipes in my book that were calorie light but also indulgent. Cue my Quark cheesecake. Made from this high protein cross between a yoghurt and a light cheese (and sold in all major supermarkets), it’s just perfect for this recipe. Pile it high with fresh berries and you have a fabulous desert at just 124 calories a slice!

Ingredients

  • 345g Quark cheese

  • 125g granulated erythritol

  • 30g plain flour


  • 2 tsp vanilla extract

  • Finely grated orange zest of one orange

  • 3 separated eggs

  • Pinch salt


  • Fresh berries


  • Mint leaves to garnish

Method 

  1. Preheat the oven to 180C. Spray a 6 or 7" loose bottomed non-stick cake tin with 1 cal butter spray, line the bottom with parchment paper and spray again.

  2. Mix together the cheese, erythritol, flour, vanilla, orange zest and egg yolks until well blended.

  3. Whisk the egg whites with a pinch of salt until they stand in firm peaks. Add a third of the egg whites to the cheesecake mix, folding lightly in with a metal spoon. Fold in the remainder of the whites.

  4. Pour into the tin and bake in the centre of the oven for about 60 minutes. Cool and then refrigerate. Decorate with fresh berries and mint leaves as desired. Inhale and devour.
